Introduction: From the Certified Organic tea plantation on BaiYuan mountain of Northeast Hunan province. The State forestry service has banned any form of logging in this region which has abundant vegetation and various land forms. The highest elevation tea farm is at 925m and the lowest at 180m. The average air temperature per year is 15C, with more than 1600 hours of sunshine, and 1396mm of precipitation. There are 265 days in frost-free period each year, the first frost comes at about 25th, November around, and the last frost at 3rd, of Match around. So the area has the ideal natural conditions for planting organic tea. The tea gets its name from the tightly rolled white tipped leaves. When infused they 'spring' open and are a delight to watch. The White Spiral Spring is a spring plucked tea and made in April. After the leaf is withered, it is gently bruised and undergoes a series of rolling steps to bring it into a tightly rolled shape.

Large-leaf Chinese green teas are known for their full flavor and smoothness. To attain this balance and avoid too much bitterness or astringency, we recommend using slightly cooler water. If the water is too hot, the leaf will “stew”, creating a bitter, “spinachy” cup. Moderately hot water, 150 to 170 F, with two loose teaspoons of leaf per cup and a steeping of 2 to 3 minutes provides 2 to 3 satisfying infusions.
Another common method would be to enjoy the tea “Chinese style”. Merely place a few leaves at the bottom of a cup or glass, add hot water, and cover. After a couple minutes or so the leaf will unfurl and sink to the bottom of the vessel allowing you to drink from the top. When the water is down to just over the leaves, simply add more water. This style provides many infusions for a small amount of leaf.
