Introduction: This tea comes from the famous Nilgiris or Blue Mountains in India, and from the first organic tea estate to be certified by Transfair International. The Blue Mountains are located in the South-Indian states of Tamil Nadu and Kerala. Tea is grown at elevations of 1,000 to above 2,500 metres. The principal town of the area is Udhagamandalam, although the old British name of Ootacamund, shortened to Ooty, is often used. In the town there are many buildings which look very "British", particularly the churches. Long, deep green colored leaves, baked at high temperatures to give a strong, slightly brisk green tea.

Flavor Profile: Strong, roasted, slightly fruity aroma. Brisk flavor with a full, smooth finish.

Smaller leaf green teas are known for their bright, vegetal flavor and smoothness. To bring out these desired qualities while avoiding too much bitterness or astringency, we recommend using slightly cooler water. If the water is too hot, the leaf will “stew”, creating a bitter, “spinachy” cup. Moderately hot water, 150 to 170 F, with one teaspoon of leaf per cup and a steeping of 2 to 3 minutes provides 2 to 3 satisfying infusions.
