Plucking Season: Himalayan Sun Dried is produced in the Summer when the air is warm and dry.

Introduction: Grown at an altitude of 4800 feet and 20 miles from Darjeeling in Kurseong ‘The Land of White Orchids’. Its key position between the mountains and plains makes it an ideal environment for tea growing. Several tea estates known to make light, fragrant black teas can be found tucked within its gently flowing, cloud and mist covered hills. Known for its breathtaking view of the plains and rich array of flora and fauna, Kurseong has provided inspiration to centuries of artists, musicians and writers.

Sun Dried
Himalayan Sun Dried’s delicate leaves and gentle taste are a result of a skillful, yet simple process. Young, tender leaves are plucked and spread out unrolled and unbruised on indoor drying tables. Windows on either side of the room allow air warmed by the summer sun to flow gently over the leaf, drying them gradually and imparting a unique curled shape to the finished tea. No oven roasting is needed.

Flavor Profile: An herbaceous, mellow brew with a full, round body and lingering flavor. Sweet aroma with hints of peach, muscat and malt.

Large-leaf green teas are known for their full flavor and smoothness. To attain this balance and avoid too much bitterness or astringency, we recommend using slightly cooler water. If the water is too hot, the leaf will “stew”, creating a bitter, “spinachy” cup. Moderately hot water, 150 to 170 F, with two loose teaspoons of leaf per cup and a steeping of 2 to 3 minutes provides 2 to 3 satisfying infusions. Any large leaf green can be enjoyed "Chinese style". Merely place a few leaves at the bottom of a cup or glass, add hot water, and cover. After a couple minutes or so the leaf will unfurl and sink to the bottom of the vessel allowing you to drink from the top. When the water is down to just over the leaves, simply add more water. This style provides many infusions for a small amount of leaf.
