Introduction: Grown in the famous and serene Huang Shan ‘Yellow Mountains’ of Anhui province in China, Huangshan Mao Feng is consistently regarded as one of the five most famous teas of China. The region’s main city is Huangshan city, home to a famous tea market.

Huangshan Mountains
Of all the notable mountains in China, Mount Huangshan, is probably the most famous. Originally known as Mt. Yishan it was renamed Mt. Huangshan in 747 AD in recognition of the legendary Huang Di, known for making longevity elixirs.

Mao Feng
The term Mao Feng ‘Hair Peak’ refers to a family of green teas from this region and the adjacent province of Zhejiang.

Young Leaves
In making Huangshan Mao Feng, only the newly sprouted buds and leaves are plucked. The leaves are typically covered with white ‘down’, a term used to describe the silvery white hair, that provide a smooth texture to the brew.

Huangshan Mao Feng pairs especially well with ginger and lime based foods and savory snacks.

Large-leaf Chinese green teas are known for their full flavor and smoothness. To attain this balance and avoid too much bitterness or astringency, we recommend using slightly cooler water. If the water is too hot, the leaf will “stew”, creating a bitter, “spinachy” cup. Moderately hot water, 150 to 170 F, with two loose teaspoons of leaf per cup and a steeping of 2 to 3 minutes provides 2 to 3 satisfying infusions.
Another common method would be to enjoy the tea “Chinese style”. Merely place a few leaves at the bottom of a cup or glass, add hot water, and cover. After a couple minutes or so the leaf will unfurl and sink to the bottom of the vessel allowing you to drink from the top. When the water is down to just over the leaves, simply add more water. This style provides many infusions for a small amount of leaf.
